What do you do when life gives you green peppers..?

Stuff 'em!

I got a bagful of green peppers from the "staff" box at work, and devised a recipe around stuff I already had in my pantry.

I cooked some brown rice and black-eyed peas, mixed that up with onion, garlic, salt, pepper, lemon, cumin, cinnamon and paprika.  I chopped the tops off the peppers and stuffed the mixture inside, and put them in a baking dish.  I made a quick tomato sauce (this one) and poured it over the top of the peppers, and sprinkled some nooch and breadcrumbs over the top, and stuck it in the oven for half an hour to bubble and brown.

It was pretty damn tasty.  Yum!

On safari.


My mother and father are heading off to Tanzania in early July to spend 12 months working in Bukoba for VSO!  It's very exciting for them, as it's something that they've wanted to do for a very long time.  I'm hoping for my mysterious benefactor to pull his/her finger out and fly me to Africa to visit them at some point but I doubt it will happen, somehow.  I'll just have to live vicariously through their blogs - Mum's at Our year in Africa and Dad can be found at Bukoba Steve's Tanzania birding blog.

Lisa helped me move some stuff and she stayed to pick roses from the garden and drink hot blackcurrant. 

Do you like the view out my window?  I love my little apartment and my cat and my friends so much.  Things are stressful at the moment with university and changing jobs and not having very much money so it's wonderful to have the stability of home and friends.  Thanks everyone, you know who you are.  xx
